Steamboat Recipe

For the soup:

4 Chicken carcasses

1 Jicama (Bang Kuang)

1 Carrot

Salt to taste

Water

Add wan shui if desired

Instructions:

1.       Boil the chicken in boiling water for 5mins. Rinse & set a side

2.       In a soup pot, add jicama, carrot & chicken.

3.       Bring to boil. Reduce heat & simmer for 2hours.

4.       Season salt to taste.

Suki Dipping Sauce Recipe

Ingredients:
5 cloves garlic, chopped
A handful of red hot chilies, chopped with seed (about 1/2 cup)
2 tbsp Thai sweet chili sauce
2 tbsp fish sauce
1/2 tsp salt
2 tbsp water
1-2 tbsp ground bean sauce
1/2 tbsp lime juice
1 tsp sugar
1 tbsp palm sugar, grated
3-5 drops of sesame oil
1 tbsp toasted sesame seeds
1 tbsp chopped coriander

Method:

Blend all items together (except for sesame oil, sesame seeds and coriander) until smooth, and then add sesame oil. Check for seasoning and adjust according to taste. Garnish with sesame seeds and coriander before serving.

Notes:

1.       Ground bean sauce is made from fermented soy beans. Make sure you use the salty one, and NOT the sweet bean sauce.

2.       Make a large batch, and any leftover sauce (and steamboat ingredients if any) can be used to make a quick stir-fry the next day!

Homemade Chili Sauce 2

3 red chili – seeded

3 chili padi

2 – 3 cloves garlic

1 tbsp each chili sauce, tomato sauce & lime juice

1 -2 tbsp sugar

¼ tsp salt to taste
