Carrot Cake Recipe
Ingredients:
250g – 300g Carrots
A handful of Walnuts/Raisins (Optional)
Ingredients A:
150g Self-Raising Flour
75g Plain Flour
1tsp Bicarbonate Soda
½ tsp Ground Cinnamon
Ingredients B:
185ml Oil
80g – 100g Brown Sugar
80g Golden/Maple/Caramel Syrup
3 Eggs
1tsp Vanilla
Instructions:

Peel & grate the carrots
2.
Sift all ingredients A together and set aside.
3.
Mix ingredients B (brown sugar, oil, golden
syrup, eggs & vanilla) in a separate bowl until combined.
4.
Mix in carrots and the rest of the dry
ingredients
5.
Bake for 1 hour. Set aside for 5minutes before
turning out onto wire rack.
For the Cream
Cheese (Lemon)
Ingredients:
250g Cream Cheese
30g – 40g Butter
40g Icing Sugar
1 Lemon Zest (Whole)
Lemon Juice
Instructions:
1.
Blend all ingredients until smooth.
