Ingredients
FOR THE CRUST
- Vegetable oil cooking spray, for pan
- 1 1/3 cups vanilla wafer or shortbread cookies, finely ground (6 ounces)
- 2 tablespoons unsalted butter, melted
- 2 tablespoons sugar
- 1/8 teaspoon ground cinnamon
- Salt
FOR THE FILLING
- 1 cup sour cream, room temperature
- 2/3 cup sugar
- 4 ounces mascarpone cheese (1/2 cup), room temperature
- 4 ounces cream cheese (1/2 cup), room temperature
- 2 ounces soft fresh goat cheese (1/4 cup), room temperature
- 1 vanilla bean, split and scraped, pod reserved for another use (or 3/4 teaspoon pure vanilla extract)
- 1/4 teaspoon finely grated lemon zest
- 1 cup heavy cream
FOR THE TOPPING
- 1 pound sweet cherries, halved and pitted (3 cups)
- 1/3 cup sugar
- 2 teaspoons balsamic vinegar
- 1/2 cinnamon stick
- 1 tablespoon cornstarch
- 1 tablespoon water
