Jojo's Steamboat Recipe

Steamboat Recipe

For the soup:
4 Chicken carcasses
1 Jicama (Bang Kuang)
1 Carrot
Salt to taste
Water
Add wan shui if desired

Instructions:
1.       Boil the chicken in boiling water for 5mins. Rinse & set a side
2.       In a soup pot, add jicama, carrot & chicken.
3.       Bring to boil. Reduce heat & simmer for 2hours.
4.       Season salt to taste.


Suki Dipping Sauce Recipe

Ingredients:
5 cloves garlic, chopped
A handful of red hot chilies, chopped with seed (about 1/2 cup)
2 tbsp Thai sweet chili sauce
2 tbsp fish sauce
1/2 tsp salt
2 tbsp water
1-2 tbsp ground bean sauce
1/2 tbsp lime juice
1 tsp sugar
1 tbsp palm sugar, grated
3-5 drops of sesame oil
1 tbsp toasted sesame seeds
1 tbsp chopped coriander

Method:
Blend all items together (except for sesame oil, sesame seeds and coriander) until smooth, and then add sesame oil. Check for seasoning and adjust according to taste. Garnish with sesame seeds and coriander before serving.

Notes:
1.       Ground bean sauce is made from fermented soy beans. Make sure you use the salty one, and NOT the sweet bean sauce.
2.       Make a large batch, and any leftover sauce (and steamboat ingredients if any) can be used to make a quick stir-fry the next day!





Homemade Chili Sauce 2
3 red chili – seeded
3 chili padi
2 – 3 cloves garlic
1 tbsp each chili sauce, tomato sauce & lime juice
1 -2 tbsp sugar
¼ tsp salt to taste


Homemade Chili Sauce 3
150g fresh red chili
1 lemongrass
2 shallots
3 cloves garlic
½” ginger
½ tsp salt
1 tsp sugar
Lime juice
2 tbsp roasted peanut

Elena's Carrot Cake Recipe

Carrot Cake Recipe

Ingredients:
250g – 300g Carrots
A handful of Walnuts/Raisins (Optional)

Ingredients A:
150g Self-Raising Flour
75g Plain Flour
1tsp Bicarbonate Soda
½ tsp Ground Cinnamon

Ingredients B:
185ml Oil
80g – 100g Brown Sugar
80g Golden/Maple/Caramel Syrup
3 Eggs
1tsp Vanilla

Instructions:
1.       Peel & grate the carrots
2.       Sift all ingredients A together and set aside.
3.       Mix ingredients B (brown sugar, oil, golden syrup, eggs & vanilla) in a separate bowl until combined.
4.       Mix in carrots and the rest of the dry ingredients
5.       Bake for 1 hour. Set aside for 5minutes before turning out onto wire rack.


For the Cream Cheese (Lemon)

Ingredients:
250g Cream Cheese
30g – 40g Butter
40g Icing Sugar
1 Lemon Zest (Whole)
Lemon Juice

Instructions:

1.       Blend all ingredients until smooth.

Papaya with White Fungus Dessert

Ingredients:
Preparation methods:
  1. Boil white fungus for 5 minutes. Drain and leave it aside.
  2. Dilute the soya milk with water.
  3. Mix in papaya and white fungus. Chill it for about 1 hour and served cold!

Naturally Coloured Agar Agar Jelly



I'm not the greatest in the kitchen. I watch Nigella Lawson macerate blackberries wearing a crisp white shirt, looking all sexy and in control, and snort. My favourite white shirt is now a colourful bohemian one with pink and red splotches because of the below beetroot recipe.

That said, I do love the way beetroot turns everything it touches into a deep ruby red or lurid pink (everything except my shirt, that is). This is a great note for anyone looking into natural dyes for your Easter eggs decorating. Easter is just round the corner! (No it's two weeks away to be honest, but we need something colourful to look forward to in March when everything's grey and wet.) Please if you are making edible coloured goodies for your children don't dye them with artificial colourings, it's probably why I got so hyperactive around Children's Day and Easter.


Beetroot makes a wonderful natural red food dye. Beetroot plus a touch of milk or yoghurt or coconut milk gives you pink. Blackberry gives your purple. Carrot gives you orange. Pandan gives you green. Many south east Asian puddings and kuehs are often coloured lurid shades, and traditionally those were done with the herbs and flowers in your garden. Most people don't bother anymore, which is a shame. I got the last of Sarah and Robin's beautiful cylindrical beetroot at the farmer's market on Saturday, and thought of making one of my favourite coloured desserts from home using that naturally gorgeous red colour-- agar agar.

It’s funny how agar has become the cool new toy for chefs when it's the kind of jelly I’ve grown up with all along. For the agar-uninitiated, it’s a seaweed-derived (hence vegan) substance similar to gelatin, but it sets much more easily at room temperature and gives a ‘bouncier’ bite. It’s quite often made with ready coloured agar powder with the most elementary instructions on the packet, and set in adorable moulds, so as kids, we loved making and eating these simple treats. I used plain unflavoured agar strands instead, and dye the jelly a natural ruby shade with beetroot. This is a two-layer agar agar, one a firmer clear jelly, and the other, more pudding-like with the addition of coconut milk; if you want and are patient/ anal enough, you can go ahead and do multi-layers.




NATURALLY COLOURED AGAR AGAR 
Makes 20-30
Ingredients
14g agar strands 
1/2 cup unrefined cane sugar (adjust to taste)
1 small red beetroot, peeled and chopped
pandan leaves, tied into a knot
750ml water + More for soaking
75ml thick coconut milk
Pinch of sea salt

You also need:
10-20 jelly moulds (I use silicone mini cupcake moulds, makes unmoulding a breeze!)
OR a large tray with 2 inch high sides

Method
1. Roughly snip the strips of agar and submerge them in a basin of water, soaking for about 20 minutes till softened. After soaking, drain and squeeze out the excess water and snip.
2. Meanwhile, drop the beetroot into 750ml of hot water. You really just need the water to turn red, so a couple of minutes should do. You can leave it longer if your guests are weird beetroot fans. Drain, reserving the beetroot for some other dish, like a good frugal Asian cook should.
3. Bring the beetroot water, pandan, and agar strips to a boil, stirring until the agar strips have completely melted and you see no lumps. Add the sugar, tasting and adjusting till you’re happy with it.
4. Remove the pot from heat. Scoop out 250ml of agar liquid from the pot, into a jug. Add the pinch of salt and mix with the 75ml of coconut milk (ratio is roughly 3:1).
5. Divide this mixture into the molds, filling up to but not more than halfway. Or, if you are doing it in bulk or don’t own moulds or are just plain lazy, pour this mixture into a large high tray, till it comes up halfway. Transfer the molds or tray into the fridge to allow it to set until just semi-firm. This will take only 5 minutes or so, because agar sets really quickly.
6. Lightly scratch the surface of the semi-set coconut layer with a toothpick, so that the next layer can hug/cling/bond to it. Pour the remaining agar liquid on top of the coconut layer, up to the brim of the moulds or tray.  If it looks like it’s starting to thicken and turn lumpy again, just stick the pot back onto the stove, stir, to warm it up and it will melt again.
7. Refrigerate the moulds or tray until the agar agar is fully set. 
8. To unmould, just run the toothpick around the edges and flip over; it should pop out easily, and, if you’ve followed my tips, in one piece. If you have made them in a tray, cut the agar agar up into cubes/wedges/choice of crazy creative shapes. You can keep these chilled until ready to serve, preferably cool, though these are picnic-safe too because they won’t melt away in the sun like jelly. 

Variation
You can also add fruits to agar agar. Slightly sharp fruits are best for a surprising contrast to the sweet jelly: fresh raspberries in summer, or poached rhubarb this month. Wait till the second layer of agar has turned semi-firm (about 3 min in the fridge) before adding the fruits, so it stays suspended within the jelly.



I know it seems confusing with all those measurements but you don't have to be perfectly accurate to the last ml. It does make you feel sort of like a scientist though, pouring coloured liquids and watching them turn into solids, so I think this could be a fun project for the little ones. I'm not little but I thought it was fun anyway. Best of all, agar agar is annoying light and healthy for a pudding. I popped 4 into my mouth for a snack. I'm not sure it's that guilt-free then, but I felt like a happy (but not hyper) kid again :)

You can get crazy with agar. If you mess around with the ratios a bit, you can come up with things like mousses/puddings/creams. Sissi has some glorious ideas.

Soya Beancurd Pudding 香滑冻豆腐

Every time when I visit Maxwell Food Centre I always see a long queue waiting to buy the popular soya beancurd pudding at this stall Lao Ban 老伴豆花. Its has been a hit among Singaporeans now. The soya beancurd pudding is so silky smooth, it melts in your mouth instantly ~ really love it! But I only tried twice as I was not willing to join the queue for at least 15-20 minutes because there were as many as 20 or more people standing in front of me. Some simply buy 5 or 10 small tubs of the pudding at one go. I happened to see this beancurd pudding inside a Chinese magazine Gourmet Living 时尚品味. The method of making this beancurd pudding is so easy. I didn't even boil the soy milk mixture (3 satchets of UNISOY Instant Organic Soya Milk Powder) used as the recipe stated. Just bring the water to big boil and off heat then pour the soya milk mixture into it and mix well with a hand whisk or you may like to follow the original methods as the recipe below. 

This chilled pudding is really smooth that just glides down your throat. So good for hot weather :)


Soya Beancurd Pudding 香滑冻豆腐


      Ingredients: (this is the original recipe from the magazine)
      100g Polleney Soybean Powder        
      40g Sugar
      40g Coffee-mate powder
      20g Instant Jelly
      100ml Water (at room temperature)
      900ml Water

      Method:
  • Mix all ingredients with 100ml water .
  • Boil 900ml water and  pour  Polleney Soybean mixture into it.  Stir well until boiled.
  • Pour mixture into cups or moulds and let it set. (do not stir)
  • Chill pudding before serve.

OR you may like to try my method: 
       3 satchets UNISOY Instant Organic Soya Milk Powder (no sugar added)
       40g Sugar
       40g Coffee-mate powder
       20g Instant Jelly
      100ml Water (at room temperature)
      900ml Water

  • Mix all ingredients with 100ml water.
  • Boil 900ml water and off heat.  Pour UNISOY Instant Organic Soya Milk Powder mixture into it and stir with a hand whisk.
  • Then pour it into cups or moulds and let it set. (do not stir)
  • Chill pudding before serve.

*boil water with 2-3 pandan leaves, discard leaves then pour into the ingredients 
  and stir gently before pouring into cups.
*remove bubbles with a dessert spoon.

Valentine Rose Jelly

Agar agar jelly is such a treat to dessert lovers and has been my most favorite. And for those who do not use gelatin an animal extract, agar agar is a blessing I'd say. It is extracted from sea-weed, a plant source suitable for vegans and vegetarians. Agar agar can be used to make jellies, puddings, jams and desserts. It is also benefiting to health inmany ways as it is rich in iron, calcium, it is also high in fiber, low in fat and carbohydrates, hence gives a fuller feeling and is best for dieting and fasting. If you are conscious about health you can skip sugar in your dessert and have it plain or replace it with honey or any low calorie sweetener. 

Here is a rose pudding, that will be best fitting dessert for valentine's day treat. This pudding tastes like rose milk, kids and grown ups will love it and the dessert will vanish in minutes. I couldn't myself resist from tasting a few heart jellies while clicking ;) You can make variations with the same base, you can add chopped nuts, fresh rose petals or rose preserve. The measurement I used gave me perfect jellies and has not gone wrong me so far, no one would not guess its agar agar I enjoy preparing these as they are super easy to make and also interesting to see the jelly get set in room temperature. I have used rose preserve just for an added excitement but its all optional. You can enlighten your valentine's day dessert as you wish by using your creativity. Make your day even more delightful with this easy to prepare dessert!!

  



INGREDIENTS

Total Preparation Time - approximately 2 hours 
  1. Milk - 500 ml 
  2. Agar agar strips - 5 grams 
  3. Sugar - 75 grams 
  4. Rose essence - 1/8 teaspoon 
  5. Pink food color - As required (use additional color only if your rose essence does not have added colors) 
  6. Gulkand / Sweet Rose Preserve - 2 teaspoons (optional)





PREPARATION METHOD

  • Boil milk and set aside. 
  • When it turns warm, add rose essence, sugar, and stir well. Then add gulkand (rose preserve), pink food color (optional) and mix well. Now check for sugar and add extra if needed. 
  • Then take the agar agar strips and cut it into smaller pieces using a scissors. Then wash it well in water, squeeze off water and put the strips in a saucepan. 
  • Now pour water (nearly 75 to 100 ml) until the strips gets immersed well. Then place on flame and stir frequently. The agar agar will start to dissolve after few minutes. Just wait patiently. 
  • After about 10 to 15 minutes it will dissolve completely and seem like syrup. There will be no tit bits left. 
  • Now remove from flame and pour the agar agar solution into the prepared milk mix and stir really well. 
  • Pour into your favorite moulds or into a baking tray or any clean dry tray and set aside until it cools down completely. The jelly will set well in room temperature itself you can either chill it or serve directly. It may take upto 1 to 2 hours for setting well depending on the volume.
  • Now place in refrigerator until it chills well. 
  • Remove from moulds (it will easily come out when set well) and serve. If you use a baking pan you can simply cut out squares or shapes using a cookie cutter. 
 

TIP 1: Measure the right amount of agar agar and use it, else your pudding/jelly might not set well. If the jelly is very thick it might mean that you have added too much of agar agar strips. There are also instant agar agar crystals available which can be used according to the packaged instructions. You cannot use the same amount of agar agar crystals instead of agar agar strips, so check the package for instructions and use accordingly.

TIP 2: Never add the agar agar strips directly, always dissolve it first in water and then use it in recipes. 

TIP 3: Always take care to use the agar agar solution while its still hot, if it cools down you can re-heat it again and use it. 


 

 Super delicious, delectable and lovely rose pudding jelly is now ready!! Serve chilled and enjoy!!

Pinky Berry Jelly

Pinky Berry Jelly

Ingredients:
Preparation methods:
  1. Put the 1300ml water to boil. Add in the 30g of jelly powder. Boil for 20 minutes.
  2. Dilute the 5 tablespoons of Biogreen Pink Lady Oatmilk in 200ml water and 3-5 tablespoons of Biogreen O'Blue Organic Agave Nectar
  3. Mix the boiled jelly with the diluted Pink Lady Oatmilk and agave nectar and place in the jelly mold.
  4. Sprinkle Biogreen Wisconsin Cranberry on it.
  5. Chill it and serve!
